It is time for a roadside pasta recipe and it’s super simple. Andy made this in less than 20 minutes at a roadside stop a few miles away from where our gig was in Taos, NM. We got the spices from Fernandez Chili Co, an amazing local business in Alamosa, CO that has the best chili products and spices we’ve have ever tasted.
The other perk of this recipe is that it is made with travel friendly ingredients.
Whole Wheat Pasta with Fresh Tomatoes and Spices
12 oz whole wheat spaghetti
1/4 cup olive oil
6 fresh roma tomatoes, chopped
1 shallot, diced
1 TBS chili molido puro
1 TBS dried oregano
1. Start the pasta water to boil. Andy used a MSR camp stove and a couple of metal camp sauce pans.
2. Chop the tomatoes, dice the shallot, toss with the oil and spices and let sit in a bowl in the sun while you wait for the water to boil.
3. Put 1/4 cup of the boiling pasta water in the the bowl with the tomatoes and spices. This will help make the mix saucy.
4. Add the cooked pasta to the the bowl of tomatoes and spices, toss everything and salt to taste.
Super flavor. Lots of energy for performing.
